ZUCCHINI PARMESAN CHIPS

3:05 PM – how do I know it? Because every day, around the same hour I take a glance at my desktop’s clock, counting the hours that passed since lunch – in this case, exactly one hour – you would think that a main dish + dessert would be more than enough to keep one’s thoughts away from a snack, but in my case, no matter when I took lunch, if I took it and how consistent it was, between three and four PM I feel the urge of a snack – preferably a chocolate peanut bar, some potato chips or, in worst case scenario, a cupcake – fruits and nuts are on the black list. After a quick look into the fridge I turn to my desk totally unsatisfied –only some strawberries, a zucchini, some cheese and a few horn-shaped walnut cookies. A slice of cheesecake topped with salted caramel would be nice… Too cold to take by assault the shelves of the supermarket across the street, I start browsing a few online shops – spring wish lists, please keep my thoughts away from the temptation. A commercial video pops up – I always close them the same nanosecond – as a sign, this one features white chocolate squares, filled with cherry jam and topped with roasted walnuts – so long trying to ignore my sweet tooth. Returning to the kitchen, I grab the plate with the horn-shaped cookies, eating them on my way to the desk. Feels better but I’m not completely satisfied. If only they were more than five…Browsing away from the online shop’s page – so long purses, I’m dealing with something critical right now – I turn to Pinterest, the heaven of home cooked meals. Searching for? A snack recipe, of course. Typing the aforementioned two words, my feed gets assaulted by healthy banana cookies, healthy eggplant pizza, healthy apple chips –why does every recipe have to include the word HEALTHY? Realizing I’m not strong enough to swim against the tide – delicious looking pictures, you’re the ones to blame – I save a few of the recipes that sound more appealing to me. Few minutes into this brain-washing “healthy snack” paradise and I actually don’t even care if those chips are made of zucchinis or the healthy version of my fave energy bar doesn’t have a drop of chocolate in it.  I feel like trying them anyway, after all who am I to ignore a trend? The first healthy-snack recipe I tried, down-below.

ZUCCHINI PARMESAN CHIPS

1 zucchini

3 eggs / beaten

½ cup flour

½ cup vegetable oil

1 cup panko

½ cup parmesan

½ tsp of garlic powder

1/2 tsp salt

a pinch of oregano

INSTRUCTIONS:

Heat vegetable oil in a large skillet over medium heat.

Combine Panko, Parmesan oregano, salt and garlic powder; set aside.

Dredge zucchini rounds in flour, dip into eggs, then dredge in Panko mixture.

Add the zucchini rounds to the skillet and cook until evenly golden and crispy, about 1 minute on each side.

 

 

Transfer to a plate and enjoy immediately.
